The Mediterranean-inspired Eos by Chef Michael Psilakis and restaurateur Donatella Arpaia combines dramatic design and award-winning cuisine to create a downtown Miami dining experience on the 15th floor of Viceroy Miami. Lauded by Miami New Times as "the new benchmark for Miami hotel restaurants," the Eos is a reflection of Miami: sexy, bold and rooted in health and lightness. The name Eos, which means "new dawn" in Greek, encapsulates the ethereal lightness of Psilakis' cuisine and alludes to his exploration and refined interpretation of the small plate style of dining, borrowing ingredients from the Mediterranean and creating modern expressions of his native Greek cuisine. An innovative wine and signature cocktail list adds an exciting element to the Eos dining in Miami experience.

Recognized for bringing Greek cuisine to the modern culinary stage, Psilakis and Arpaia have earned many culinary top honors.
